Switch up your lunch grain bowl with this tumeric cauliflower rice bowl! It’s a tasty and fun way to sneak in the health promoting benefits of turmeric!
I’m not big on the term “superfoods.” Certainly, some foods are much more nutrient dense and offer more health benefits than others. We can appreciate that fact without giving the food a name that implies superhero powers. Plus, I find it incredibly annoying that most foods termed “superfoods” are exotic, expensive and inaccessible to the average person. It makes good nutrition seem out of reach.
That said, there are some foods that I try to work into my diet as often as possible because of their unique health benefits – and because I love their taste too! Fatty fish is one. Fermented foods are another. Turmeric, the bright yellow spice commonly used in Indian cuisine, is a third.
For my latest Food Rx column, I’m sharing a recipe using turmeric to flavor one of my new favorites – cauliflower rice! It adds a tasty earthiness and turns it a gorgeous golden hue. In this recipe, I used cauliflower rice as the base of a “grain” bowl, one of my go-to lunches. Head to Food Rx for the recipe, and to learn why I try to include turmeric in my diet as often as possible!
