Celebrate these last summer weekends by heating up the grill to make these barbecue salmon tacos with avocado, cabbage and salsa verde!
You know how they say bad things come in threes? Well for me, it always seems like technology issues come in threes. Which is really annoying, because of all the privileged problems to have, technology issues are definitely the worst, right?
First I messed up something in my password keychain so I can’t sync things between devices or backup to cloud. And it’s been like that for almost a month, which is really quite excessive, but for the life of me I have no clue where to start in fixing it. Like, I say I’m going to dig in and figure it out, then I sit down and look at my computer and say, “well, what next?” And then 30 minutes later I find myself reading a wikipedia article on Su Lin the panda.
Then a couple weeks ago there was this HUGE lightning storm in Columbia and we got hit (our house, not us). It sent this massive power surge, which took out our wireless router. We still have internet from the modem, but it always decides to go out right when I need internet most, and my husband has decided to turn into Tim “The Tool Man” Taylor on this one. Honey, we need a new wireless router, now.
Those are both annoyances, but this one is pretty bad. Yesterday I was trying to get some old pictures for a project I’m doing with Earth Fare (P.S. I’m doing content development with Earth Fare now, yay! I’ve been shopping there since it was one little store in Asheville!). When I went to access my external hard drive with ALL my blog pictures and ALL my vacation pictures from the last 3 years, nothing was there. My stomach hurts just typing that out. Apparently the lightning got that too.
We brought the hard drive to the computer shop and they think they can retrieve everything, but they can’t find the right program to do it and each attempt takes 8 hours because there are so many pictures on there 🙁 The last time I called, the guy reassured me “I can’t promise anything, but we should be able to retrieve everything.” I don’t know if he was saying that because he felt confident but needed to cover his rear just in case, or if he just didn’t want to be the guy who broke the bad news…
The broken hard drive has been making me pretty anxious the past couple days. I’ve been trying this trick one of the psychologists I share an office with taught me and it’s been a huge help, so I thought I would share with you all in case you struggle with anxiety.
If you think about it, anxiety is essentially imagining bad things happening. Like the worst case scenario constantly playing in your head. To train your brain another way, practice imagining positive outcomes. When my brain starts to picture a phone call from the computer store to let me know my data can’t be saved, I just flip it around and imagine them calling me with good news! Which they haven’t done yet… 🙁
Try it and see if it helps! And maybe say a little prayer for me and my hard drive!

- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon brown sugar
- ¼ teaspoon ground coffee
- 1 lb salmon filets
- For serving,
- 12 corn tortillas
- Shredded cabbage
- Sliced avocado
- Salsa verde
- Heat a grill to medium-high heat.
- In a small bowl, mix together chili powder, cumin, brown sugar, and coffee. Rub salmon with spices then season with salt and freshly ground black pepper.
- Place salmon on the grill, skin side down, and grill 6-8 minutes. Flip and cook 6 minutes on the other side. Remove from grill to a clean dish and set aside to cool slightly.
- As salmon cools slightly, char corn tortillas over the hot grill or over a gas stove set on low heat. When salmon is cool enough to touch, use a fork to cut it into large chunks.
- Fill tortillas with shredded cabbage, salmon, a slice of avocado and drizzle with salsa verde.
