Welcome to the The Sunday Paper, where each week I share my favorite recipes and inspiration for a happy and healthy life for you to enjoy on a leisurely Sunday. For more throughout the week, follow me on twitter, pinterest and facebook.
This week’s Sunday Paper features fuel for your fall pumpkin obsession, my favorite make ahead breakfast, and the difference between intact whole grains and whole grain flour.
Happy Sunday! Hope you all had a fantastic week. I’m just gearing up to head out to FNCE, the national conference for dietitians on Friday. Incredibly excited to be see and learn from so many of the dietitians who have inspired me in my career.
I came across this quote while listening to this TED Talk by Scott Dinsmore (who sadly was killed last week on Mount Kilimanjaro). In his TED Talk, he used it as an example of how to achieve professional success by surrounding yourself with inspiring people who are bettering the world through their work – something I’m pretty pumped to do next week at FNCE 😉
I also think this quote is also a great one to think about for anyone struggling to maintain a healthy lifestyle. Consider the five people you spend the most time with. Are they constantly hopping from one fad diet to the next? Do they take a work hard, play hard life philosophy, neglecting to take time out for themselves? Do they talk negatively about their bodies? These habits can easily rub off on you.
Spend more time with people who exude the qualities you want for yourself. Health and happiness are contagious, and that’s something you want to be infected with!
HEALTHY KITCHEN INSPIRATION:
VEGETARIAN COBB SALAD (Oh My Veggies) // Not sure if I’m more excited about the homemade honey mustard dressing or the smoky chickpeas!
EGGPLANT AND TOFU TERIYAKI (Delish Knowledge) // I just love eggplant with Asian flavors.
PAN SEARED FENNEL WITH WHITE BEANS AND BLACK OLIVES (Danielle Omar) // I always forget how delicious fennel is, then dishes like this remind me.
PUMPKIN PIE NO BAKE BITES (The Hummusapien) // I will take this over a PSL any day.
MARSHMALLOW FREE RICE KRISPY TREATS (MJ and Hungryman) // I hate marshmallows, so I love this. Also, refined sugar free and made with whole grains.
SMOKED SALMON AND GOAT CHEESE MINI FRITTATAS (Marisa Moore Nutrition) // Betcha didn’t know you can freeze eggs. Love the idea of keeping these mini frittatas on hand for a quick breakfast. And how ’bout that smoked salmon?
PUMPKIN CRUMB MUFFINS WITH CHOCOLATE CHUNKS (Healthy Nibbles and Bits) // More fuel for your fall pumpkin obsession.
HEALTHY AND HAPPY LIVING INSPIRATION:
ONLINE COMMUNITIES RALLY AROUND ANOTHER WAY TO VIEW FITNESS (Vocativ) // The first graphic says it all.
GRINDING GRAINS INTO WHOLE FLOUR: WHAT GETS LOST (Nutrition Diva) // A common sense answer to one of my FAQs. Yes, flour (even whole grain) has slightly more of a glycemic effect, so it’s best to prioritize intact whole grains. But let’s chill out with the flour hating, guys!
INUIT STUDY ADDS TWIST TO OMEGA 3 HEALTH STORY (The New York Times) // Fascinating! Many in the paleo community have used the Inuit as an example why wild animal protein heavy diets are supposedly healthier, but this study shows the Inuit actually evolved to tolerate this type of eating pattern.
EATING MORE FRUITS AND NON-STARCHY VEGETABLES IS ASSOCIATED WITH LESS WEIGHT GAIN (Science Daily) // Duh. Just in case you needed a reminder.
THIS WEEK ON AVOCADO:
THREE TRACKING TOOLS TO BECOME YOUR HAPPIEST, HEALTHIEST YOU // Plus a giveaway for a fitness tracker so be sure to enter!
10 MAKE AHEAD BREAKFASTS FOR FALL (Brit + Co) // Featuring my slow cooker pumpkin cinnamon rolls, which I really think I need to reshoot (aka I need an excuse to make them again)
SCORE MAJOR POINTS ON GAMEDAY WITH THESE FIVE MEATLESS MEALS (Everyday Health) // I’ve been known to bring vegan chili cheese dip to games. If you’re not quite that brave, try my rosemary-garlic popcorn featured in this article.
